Cilantro and mint chutney with pakoras |
Bright and lively Cilantro and mint chutney
This fresh chutney recipe is so healthy and it’s easy
to make with a blender!
1 large tomato, roughly chopped
1 lime, seeded and juiced
2 cups fresh, washed cilantro leaves and stems
½ cup fresh washed mint leaves
4 green chillies
1 small fresh garlic clove
½ inch fresh ginger, roughly chopped
salt to taste
Add lime juice and tomato to blender and buzz till blended. Add the chillies, garlic and ginger and buzz till
well blended. Add the mint and half the cilantro
and buzz. Add the rest of the cilantro and
buzz. The last bit doesn’t have to be perfectly
blended in. A little texture is nice. Pour into a pretty bowl with serving spoons. This recipe for a bright and lively chutney will make an excellent
accompaniment for pakoras.
